Project for 2012 summer:
Filleting knives are forged from 440-C Stainless Steel, heat treated to about 59 RC.
At around 8" of blade these knives are ideal for filleting large fish.
Unique design allows for stiffness for cutting through fish bones, and flexibility to take off skin and fillets without being flimsy like some commercial models.
Some owners declared filleting over 180 salmon without the need for sharpening.
All come with hand molded, heavy gauge Kydex sheath for safety, easy washing, and have snap detent to keep knife from sliding out on its own.
Price is $250.00 US plus $20 Shipping - prepaid in full by Postal Money Order.
